From Villorba, in the province of Treviso, the regional association guides research and protection for an entire sector. Its sole denomination is Montasio DOP, a cylindrical cow's milk cheese aged for at least sixty days, the minimum time required for the paste to compact and for the crystalline notes of mature cheeses to emerge. The association's role is systemic rather than focused on a single product: coordinating a thousand deliveries means influencing the dairy landscape of the North-East, balancing the industrial scale of Venetian milk with the strict discipline of a precise denomination. It is a directorial effort, linking the dimension of numbers to the safeguarding of a cheese with a defined profile. Here, protection does not come from a single form, but from the ability to foster dialogue across a vast productive territory around a common standard.
