Founded in 1319 amidst the Crete Senesi, near Asciano, the Abbazia di Monte Oliveto Maggiore unites agriculture and contemplation. The Benedictine monks live by the Rule of Saint Benedict—*ora et labora*—structuring their day between choral prayer and work in the vineyards, a continuity that has endured for centuries without interruption. On these clayey soils grow Sangiovese, Trebbiano Toscano, and Canaiolo Nero, from which the entire range under the Toscano IGT denomination is produced: whites, reds, and rosés that reflect a monastic stewardship where viticulture and spirituality remain inseparable. This is not an ancillary activity, but an extension of the cloistered rhythm, where the vineyard becomes part of the prayer life and not merely a source of income.
