From Berzo Inferiore, on the lower slopes of Brescia, the Morandini brothers continue the production of Silter DOP, a cheese entirely rooted in the logic of alpine pasture farming. The raw milk, partially skimmed by natural surfacing, is processed according to an alpine method that links the product to the pastures and geology of upper Lombardy. Time is the decisive ingredient here: each wheel rests at altitude for at least one hundred days, developing structure and character during this aging period. The result is a cheese that doesn't hide its origins, but rather declares them in its taste, reflecting both the pasture grasses and the precise hand of its maker. It's a product that measures its value in months rather than yield, where the slowness of maturation becomes the hallmark of a short, vertical supply chain, firmly anchored to a mountain territory that few other areas can convey with such clarity.
