Agripadana

In Porto Tolle, where the Po fragments into branches before reaching the sea, Agripadana cultivates rice under a single protection, Riso del Delta del Po IGP, whose area encompasses seventeen municipalities of the delta rice paddies. The variety is Japonica Superfino, cultivated according to standards that leave little room for variation. Each grain boasts a characteristic pearlescent finish and must contain at least 6.60% protein, with an uncommon water absorption capacity: qualities that, when cooked, translate into consistency and yield. These are technical requirements, but here they stand in for the landscape—the brackish water, the delta soils, the low light of the estuary—condensed within the grain. More than a brand, the IGP functions as a description of an environment: Agripadana's rice is the form in which that amphibious territory arrives at the table, measurable gram by gram yet inseparable from the place that produces it.
