In Pieve Torina, in the Macerata hinterland, the Angeli cooperative farm raises lambs for Agnello del Centro Italia IGP, a denomination with unusually broad boundaries: one thousand four hundred and three municipalities, covering a large part of central Italy. Within this vast perimeter, the farm maintains a recognizable production. Their work focuses on three carcass types—light, heavy, and castrated—which cater to different uses and markets. What unites them is the two-phase rearing method: the animals begin with milk feeding in their first days and then transition to pasture, a process that imprints the meat with its distinctive flavor profile and the organoleptic qualities codified by the IGP. This transition from milk to grass is where the difference lies, more so than in geographical origin alone. Angeli thus positions itself within a central Italian production system that provides common rules for an enormous territory, leaving it to individual farms to translate them into meat.
