In Salento, Antica Masseria del Fano preserves traces of a long history: an 8th-century Basilian cenobium and a watchtower erected by the Gonzaga family in 1577 still oversee forty hectares of fertile land. On this estate, fifteen hundred centenary olive trees fuel the production of Terra d'Otranto DOP extra virgin olive oil, the heart of the agricultural activity. The cultivar is Ogliarola, and from its fruit emerge the aromas that tell the story of the Apulian landscape—cardoon, artichoke, chicory—encapsulated in every bottle like a botanical compendium of the territory. It is not a neutral oil but a precise aromatic portrait, built by the variety and age of the plants. The masseria combines field care with local hospitality, in a balance rooted in the centuries layered on the site. Here, the quality of the fruit and respect for the land remain inseparable, and the oil becomes the most direct way to read a portion of Salento where architecture, agriculture, and memory continue to coincide under the same centenary canopies.
