In Paliano, at the edge of the Frosinone province, Maria Elena Sinibaldi's winery cultivates volcanic soils where the Cesanese grape finds its most mineral expression. The flagship red is Cesanese del Piglio DOCG, built around the local grape variety and complemented by the indigenous Cesanese di Affile, with a minimum four-month aging period that defines its structure and longevity. The denomination, limited to five municipalities, relies on altitude and geology as the two guiding factors for each vintage.
