Simone Barisone cultivates vineyards in Gavi, the area in the province of Alessandria that has elevated a local wine to become one of Italy's most recognizable DOCG denominations. The Cortese grape ripens on these hills across eleven municipalities, giving rise to a range that spans from taut and mineral whites to *spumante* and *frizzante* wines, each with a minimum alcohol content of 10.5%. His work captures the character of the territory in bottles that speak of soil and vintage more than formula. Cortese, a discreet grape variety in itself, finds here the citrusy clarity and acidic backbone that make it a white wine suitable for aging as well as immediate consumption. The choice to also offer it in a *spumante* version broadens the register without betraying the denomination, and confirms an interpretation of Gavi built on precision rather than concessions to an easy style. A single grape, a single territory, interpreted with the consistency of someone who doesn't seek expressive shortcuts.
