A vast territory, which in this case is entirely concentrated in the work of a single Apennine farm, the smallest measure of an enormous geography. The classification distinguishes carcasses as light, heavy, or castrated, but the common thread lies in the animals' feeding regimen: first mother's milk, then pasture.
