From Gambellara, Ca' del Sette has been working since 1865 on two pinnacles of Venetian viticulture: Amarone della Valpolicella and Recioto della Valpolicella, both DOCG. At their base is the same trio of grapes—Corvina, Corvinone, and Rondinella—but with two opposite destinies, decided during the appassimento (drying) process. Amarone dries out its sugars into a powerful, dry red; Recioto retains them, yielding a sweet, concentrated passito. The philosophy of the house places the vineyard at the center: the dialogue with the soil and the decisions made season after season are as important as the cellar work. For Amarone, this means at least twenty-four months of aging, a time that softens tannins and aligns alcohol with fruit; for Recioto, a meticulous selection of the best bunches before appassimento. These are two wines that generations of Ca' del Sette entrust not to words, but to the glass—where elegance and depth are measured sip after sip, far beyond any statement of intent.
