In the Fucino plain, Abruzzo, Cardarelli Santino cultivates volcanic soils on what was once a lakebed, reclaimed and transformed into one of the most suitable areas for quality potato cultivation. The ancient lakebed has left deep, fertile soils, ideal conditions for the sole denomination the company dedicates itself to: the Patata del Fucino IGP, recognizable by its firm flesh, regular tuber geometry, and a resilient skin that withstands transport and storage. The work takes place within a strict perimeter of nine municipalities, where the regulations are not a formality but a guarantee of standards: demanding criteria that distinguish a verifiable quality product from simple commodity farming. Cardarelli upholds these rules, convinced that the denomination's value lies precisely in its ability to make this difference clear. The result is a potato conceived as the fruit of a precise terroir—that intersection of volcanic soil and the high-altitude microclimate of the Fucino basin—rather than an undifferentiated crop, and intended for those seeking consistency as well as typicality.
