In Pachino, in the southeastern corner of Sicily, Carfì Luca cultivates Pomodoro di Pachino IGP, the variety that has made this part of the province of Siracusa famous. Volcanic soils and coastal winds create conditions difficult to replicate, and the denomination sets demanding parameters for the outcome: firm flesh, minimal placental cavity, and a sugar content exceeding 4.5 Brix. It is in this last detail that the product's identity is concentrated.
