There is only one protected denomination, but around the aged wheel revolves a small ecosystem of fresh products: butter and ricotta are direct derivatives of the processing, and accompany a selection of local foods that anchor the dairy to the region's pantry. Here, the cooperative scale is not nostalgia but organization: the suppliers share milk and production specifications (Disciplinare), and aging does the rest.
