Iemmolo Rosario

Iemmolo Rosario produces Ragusano DOP, the iconic stretched-curd cheese of southeastern Sicily. Working with raw milk in the traditional manner, the producer crafts those distinctive golden parallelepipeds—each 12 to 16 kilograms of dense, creamy paste—that define the protected denomination across the Val di Noto's fifteen municipalities. Ragusano's lean, mineral character emerges from the limestone soils and ancient pastoral methods that continue to shape every wheel.
