Davide Sclavi's agricultural enterprise masters the exacting discipline of Oltrepò Pavese metodo classico, a sparkling denomination spanning 41 municipalities in Lombardy's piedmont. Working with Pinot nero, Chardonnay, and white Pinot varieties, the winery develops spumante and spumante rosé wines that spend a minimum of 15 months refining their complexity. This extended aging regime, paired with traditional méthode champenoise protocols, yields wines of textural refinement and aromatic definition.
