Founded in 1967 by a union of local farmers, 4 Madonne Caseificio dell'Emilia holds a unique position within the Consorzio del Parmigiano Reggiano: it is the only one to produce in seven facilities distributed across the provinces of Modena, Bologna, and Reggio Emilia. The name comes from a votive pillar with the image of the Virgin, and the brand has followed a trajectory from the avant-garde structure of the sixties to a consolidated role within the protected denomination. The product remains one: Parmigiano Reggiano DOP, made from raw milk and aged for over twelve months. These are slow-maturing wheels that develop the typical granular texture and flakiness of authentic cheese. The dairy opens its doors to visitors, and it's best to take advantage in the morning, during production: you can observe the curdling and shaping, then enter the aging room and read on the shelves the time that separates milk from cheese shard. It is the most direct way to understand, on site, what distinguishes a true wheel.
