A Beddu Cori was born from a precise intention: Carlo Spreafico's desire to produce extra virgin olive oil in harmony with nature, a project that found its home at Villa Monacelli, in Chiaramonte Gulfi, in 2016. The modest initial olive grove of three hundred trees has grown to over a thousand trees across seven hectares of land brought back into cultivation, a sign of patient expansion rather than a rush for yield. The company produces Olio DOP Monti Iblei using methods faithful to this natural approach, and the result is an extra virgin olive oil with medium to intense fruitiness, imbued with the green tomato notes that distinguish the olive groves of the Iblei hills in southeastern Sicily. It is an oil of the landscape, combining the hilly altitude with the choice of minimally invasive agriculture. Behind this single protected area lies an idea of coherence: reclaiming land, expanding the olive grove judiciously, and allowing the Iblean territory to define the character, from tree to mill, without forcing.
