However, the scale is deliberately minimal. Since 2018, the company has capped its production at around two thousand bottles a year, prioritizing quality despite yields that could exceed one hundred quintals. Organic and biodynamic methods govern each harvest, without interventions that alter the wine's profile, allowing each vintage to evolve on its own, shaped only by the season and the soil. The result rejects repeatability: no harvest exactly repeats the taste of the previous one, and it is precisely in this variability that the masseria recognizes the signature of the Casertano terroir from which it draws.
