In Montefalco, since 1972, Adanti has contributed to defining the wine identity of the territory by anchoring itself to Sagrantino, a variety that demands respect and time. A single denomination guides all the work, Montefalco Sagrantino DOCG, but with a dual grammar: on one side, structured reds, and on the other, concentrated passito wines, two faces of the same grape variety. Both expressions take shape after at least thirty-seven months of aging — a lengthy discipline that is not a whim, but the condition for the tannic architecture of Sagrantino to soften and its mineral depth to emerge. It is a challenging grape, rewarding those who know how to wait and punishing haste. The vision of founder Domenico Adanti continues to guide the choices: grapes selected for their ability to balance the natural rhythms of the plant with the qualitative ambition of the cellar. Within a single set of regulations, Adanti interprets the full range of possibilities — from severe red to meditative sweet wine — delivering not a domesticated version of Sagrantino, but its full character and necessary patience.
