Agricola Braendly

In Jolanda di Savoia, within the network of seventeen Ferrara municipalities that define the Po Delta, Agricola Braendly cultivates one of the great rice plains of the North. Here, Riso del Delta del Po IGP ripens, a Japonica variety of the Superfino group: large, pearly grains with a protein content that does not fall below 6.60%. It is a river and reclaimed land rice, grown where fresh waters meet the brackish push of the Adriatic. The grain's structure defines its use. Its marked absorption capacity retains seasonings and yields full, creamy textures, qualities for which this rice is sought after by northern Italian kitchens, particularly for risotto. Braendly interprets its vocation without forcing, allowing the territory — its soil, its water, its climate — to set the character of each harvest, among the most recognizable productions of the Ferrara Delta.
