Their cellar, facing east, produces sixty thousand bottles a year, drawing from the Umbrian repertoire: Sagrantino, Grechetto, and Trebbiano mark the boundaries of a work rooted in these slopes. The expression that brings everything together is Montefalco Sagrantino DOCG, the winery's sole denomination, a dense red that thirty-seven months of aging bring to full maturity, and which, in its passito version, reveals another facet of the same grape. Here, terroir is not an image but a daily practice: soil density, row exposure, and slow aging become working rules before they are bottle descriptions.
