In Cetona, within the protected olive-growing area of Siena, Agricola Verdino produces extra virgin olive oil according to the regulations of the DOP Terre di Siena. The work is governed by stringent chemical parameters: acidity below 0.5%, oleic acid over 72%, and polyphenols no less than 100 ppm. These numbers are not ends in themselves, but the measurable trace of an oil designed to last and clearly express its origin. The denomination embraces thirty-two municipalities, and the mineral soil of the area leaves a recognizable imprint on the product.
