Agrizoo Antico Demanio brings together the two ends of the supply chain, breeding and cheesemaking, transforming the milk of its own buffaloes into Mozzarella di Bufala Campana DOP. The cooperative oversees every step, from the stable to the finished product, operating within the nineteen municipalities of the protected area and maintaining direct control over the fresh, whole milk. This choice focuses entirely on a single denomination, but governs it completely: nothing in the production process leaves the company's perimeter, which explicitly links the pasture to the flavor of the freshly spun mozzarella. The short supply chain here is not a mere formula but a working method, the characteristic that defines the product's identity and guarantees its consistency. A visit to the farm is the most direct way to understand how the buffaloes' diet and the cheesemaker's craft are found, intact, in the still-warm cheese curds, following the milk from the field to the finished form without ever losing its trace.
