Al Canevon

Al Canevon crafts its wines within the strict boundaries of the Conegliano Valdobbiadene Prosecco DOCG, fifteen municipalities in the northeast where slate and limestone create a unique geology. The winery doesn't limit itself to Glera: it works with the full range of white grape varieties permitted by the denomination — alongside the base, Verdiso, Bianchetta Trevigiana, Perera, and Glera Lunga — recovering varieties that mass production tends to leave in the shadows. The product range covers all permitted versions, from still whites to frizzante and spumante, each kept within the minimum alcohol threshold of 10.5% mandated by the regulations. This continuity of styles reveals the project's essence: not just a single type of sparkling wine, but a comprehensive interpretation of what the denomination authorizes, measured against the character of a territory where the slopes and soil composition remain paramount. Here, Prosecco returns to being a matter of place before it is a matter of format.
