Al Rocol

In Ome, within the nineteen municipalities of Franciacorta, Al Rocol produces DOCG sparkling and rosé wines with at least eighteen months of aging on the lees. Chardonnay, Pinot nero, and Pinot bianco become bottles that respect the minimum alcohol threshold of 11.5%, using a method that combines the classic discipline of bottle fermentation with contemporary cellar choices. Franciacorta is a denomination young in its statutes but demanding in its timelines: the months on the lees cannot be rushed, and the finesse of the perlage is the reward for patience. Al Rocol interprets this balance between rigor and experimentation without forcing, allowing time to build complexity. The winery offers vineyard tours and tastings: a tangible way to follow the journey from grape to bubble and to measure, glass in hand, what distinguishes a long method from an easy foam.
