In Rome, Almavini works with two Castelli Romani denominations, both in DOCG version: Cannellino di Frascati and Frascati Superiore. The two wines are born from the same palette of white grapes—Malvasia bianca di Candia, Bellone, Bombino bianco—which find favorable conditions in the restricted area of five municipalities, where the volcanic soils give Frascati white wines their recognizable savoriness. The distinction between the two labels marks two registers: the sweet, late-harvest vein of Cannellino, from grapes left to ripen longer, and the drier, tauter pace of Frascati Superiore. Around this pair, the producer intertwines the cultural heritage of the territory with direct distribution in the Roman area, bringing the two expressions from the vineyards to the table without too many intermediate steps. It is a focused and undiluted effort, making the Frascati pair its perimeter and seeking in the minerality of the Lazio terroir the common thread between sweet and dry, offering two complementary interpretations of the same volcanic landscape of the Castelli.
