On the calcareous hills of Ofena, in the province of L'Aquila, Aloisi Giuseppina raises Agnello del Centro Italia IGP, the sole denomination of its production and one of the most extensive in Italy: 1403 municipalities gathered under a single brand. In such a vast territory, what gives identity to the meat is not the administrative boundary but the method, and here the regulations are rigorously followed. The lambs transition from milk feeding to grazing, and their meat is classified by carcass type—light, heavy, or castrated—each with a distinct organoleptic profile. This is not a formality: the age of slaughter and the feeding regimen create real differences in flavor and structure, which this subdivision makes legible. The geographical location, among the calcareous reliefs of the L'Aquila area, adds its own mark, linking the farming to one of the most regulated pastoral zones in the country. Aloisi's production is thus defined at the intersection of place and norm: altimetric precision on one hand, adherence to regulations on the other, composing an Apennine sheep farming that rejects improvisation.
