In Cazzano di Tramigna, in the eastern Veronese Valpolicella, Andrea Piubello works with two DOCG denominations that arise from the same process: the appassimento (drying) of the grapes. Amarone della Valpolicella brings together Corvina, Rondinella, and other local red grapes, left to concentrate slowly before twenty-four months of aging that build their structure and depth. From the same terroir, but with an opposite outcome, comes Recioto della Valpolicella, offered in both passito and spumante versions: two interpretations of a sweetness that the limestone and altitude always keep vibrant, never cloying. It is the contrast between these two wines—one dry and powerful, the other sweet and nuanced—that defines the winery's character, entirely focused on raw material and long aging times.
