In the Garfagnana valley, in the province of Lucca, Silvio Andreucci cultivates Farro della Garfagnana IGP, an emmer wheat that bears its identity on its very surface: the white streaks running across the floury kernel are its visual signature. This is an ancient cereal, protected across fifteen municipalities, that tolerates no shortcuts—it demands a precise terroir and cultivation methods faithful to traditional practices.
