Antica Trochlea cultivates Pomodorino del Piennolo del Vesuvio DOP in the eighteen municipalities of the volcanic belt where the soil imparts a particular chemical composition to these tiny fruits. Each tomato does not exceed twenty-five grams and reaches a natural Brix level of 6.5 degrees, a value that explains the combination of firm flesh and that distinct bittersweet flavor which makes it recognizable at first taste. The oval, pointed shape and resistant skin are not aesthetic details but the prerequisite for an ancient preservation method: traditionally, the tomatoes are tied and hung on braided twine, the piennolo that gives the denomination its name, and thus they keep for months, further concentrating their flavor. In every fruit, the imprint of Vesuvius remains legible, the mineral signature of a soil that no other place can replicate. It is a product small in size and vast in intensity, an exact measure of how much a territory can express through a single ingredient.
