On the Montagna dei Fiori, in Valle Castellana, Antiche Caciare has been carrying on a tradition since 2018 that dates back to 1930, when grandfather Sabatiano led a flock of a thousand sheep. Today, a group of friends raises about eight hundred Comisana sheep, restoring to the agricultural traditions of the Teramo area a rhythm dictated by the seasons rather than by a production calendar. The choice is clear: pasture grazing, long maturation times for the animals, and respect for natural cycles. From this breeding comes Agnello del Centro Italia IGP, a denomination with a vast perimeter—1,403 municipalities distributed along the central Apennine ridge. The young animals grow nourished by milk and pasture, without artificial acceleration, following a path that the geographical indication recognizes and protects. Here, slowness is not a narrative flourish but a method: it defines the quality of the meat and the relationship between the flock and the Abruzzese mountains. Antiche Caciare thus embodies a mountain-side animal husbandry, where family heritage and the high-altitude landscape remain the coordinates of every choice.
