At altitudes exceeding five hundred meters, among the five mountain municipalities in the province of Perugia, Antichi Sapori Norcini produces Prosciutto di Norcia IGP. The high-altitude climate is not a detail but a condition: the dry, fresh air of the Umbrian Apennines governs the drying and aging, giving the meat the time and rigor required by the denomination. The product has a recognizable shape—the classic pear-like form—and a minimum weight of eight and a half kilograms, within which is concentrated a salting expertise handed down by local hands. The establishment, in 2004, of the Sindacato di Tutela (Consortium for Protection) set the rules for this expertise, protecting production specifications to ensure the aromatic profile remains constant over time. Each piece marked with the Consortium's brand thus functions as a signature: it certifies that the ham truly belongs to the Umbrian mountains and its Norcia tradition, and is not an imitation. It is in this intertwining of altitude, discipline, and collective control that Prosciutto di Norcia finds its true measure, far from both industrial production and improvisation.
