Since 1992, Pier Paolo and Stefano Antolini have managed nine hectares in the hills of Marano di Valpolicella, where clay retains moisture, making irrigation unnecessary, while nocturnal temperature swings work to accumulate aromas. The rows, trained in the Veronese double pergola system and enclosed by the dry stone walls that define the landscape, yield Corvina, Corvinone, and Rondinella: the grapes from which Amarone della Valpolicella and Recioto della Valpolicella, both DOCG, take shape. These are two facets of the same process, appassimento: the first austere and built for long aging, the second sweet and velvety, each sharpened by the other. Aging follows the timelines of the specification, and the result is presented directly in the cellar, without intermediaries.
