In Mazara del Vallo, in the far west of Sicily, Assuli is now run by the third generation, who have modernized the company without straying from its grape varieties: Nero d'Avola, Perricone, Insolia, and Grillo remain the ampelographic heart, supported by pedological assessment and rigorous winemaking harvest after harvest. The two denominations of the house divide their work between vineyard and olive grove: on one side, the Sicilia DOC reds and rosés, which interpret the island's volcanic terroir; on the other, the Sicilia IGP extra virgin olive oil, focused on green tomato aromas and strict polyphenol parameters. This is an enterprise that brings together two supply chains in a single landscape, where oenological research and conscious agriculture respond to the same logic of measure. The whole tells a story of Sicily that is more cultivated than spontaneous, the result of precise choices at every step. The winery and estate are open for visits and tastings, an opportunity to sample wines and oil where they are born.
