In Leonforte, on the plateau of the province of Enna, Salvatore Astolfo cultivates Pesca di Leonforte IGP, a fruit whose character is owed to the late warmth and volcanic soils. This peach ripens slowly, remaining on the branches from September until November: months during which sugars concentrate and flavor gains depth. The defining gesture of this denomination is the “incartamento,” the practice of wrapping each fruit while it is still on the tree to protect it until harvest. It is a patient operation that sets the recognized standard in five municipalities of the Enna area and distinguishes this variety from early peaches. The result is a late-season fruit, available when almost all other peaches are out of season: in this counter-trend lies much of its identity. Astolfo works within that shifted calendar, allowing altitude and soil to sign the harvest.
