From La Morra, where it has operated since 1953, Aurelio Settimo now entrusts the second generation with a clear choice: only red wines, all from estate-owned grapes. The four DOCG denominations it oversees are divided between the two cornerstone grape varieties of the Langhe—Nebbiolo for Barolo and Barbaresco, and Dolcetto expressed in Dogliani and Diano d'Alba—each interpreted according to uncompromising protocols. The Barolo undergoes long macerations with frequent pump-overs, then rests in large oak barrels. The winery produces an average of 40,000 bottles a year, with volumes kept in balance by precise accounting: each bottle of Langhe Nebbiolo produced subtracts an equivalent measure of Barolo, a sign of a conscious relationship between ambition and yield. It is a work of subtraction rather than accumulation, where the discipline of oak and time matters as much as the vineyard. The estate welcomes visitors for tastings: an opportunity to discern in a single sip how Nebbiolo and Dolcetto tell the story of the same hill with different voices.
