Baldassarre cultivates olive trees in Città Sant'Angelo, within the DOP Aprutino Pescarese, a denomination that stretches across forty-six municipalities in the Pescara hills. Here, the protection concerns extra virgin olive oil, and the regulations focus on two decisive variables: the terroir and the harvest time, on which much of the final profile depends. The result is oils with a yellow-green color, herbaceous notes, and a moderate fruity intensity — a character shaped by the Abruzzese climate, tempered by the proximity of the sea, and by the calibrated alternation between early and late harvests. It is in that balance, rather than in a single choice, that the oil's character is determined: early harvesting brings bitterness and pungency, while late harvesting sweetens and rounds. A single designation, therefore, but managed with attention to agronomic detail. The company is not open to visitors, and its work is primarily evident in the bottle: an oil that bears the signature of the Aprutine hills and the rhythm at which the olives ripen there.
