On the plains of Nogara, in the lower Veronese area, Az. Agr. Baschirotto Ivano cultivates Riso Nano Vialone Veronese IGP, one of Italy's rice varieties most closely tied to a specific territory. Crop rotation and spring water nourish the Vialone Nano variety, with its short, delicate grain, capable of absorbing seasonings while remaining firm during cooking — the reason why Veronese cuisine chooses it as the base for its creamy risottos. The management revolves around an idea of stewardship: methods that preserve soil fertility and maintain the integral link between grain and earth. The semi-processed white rice arrives at the table as a synthesis of a defined terroir, that of the plain south of Verona, where rice cultivation has coexisted for centuries with spring waters. Baschirotto does not pursue volume but consistency, allowing the quality of the raw material to define the product, in an area where rice is less a crop than a local language, spoken from harvest to harvest.
