In Sant'Ambrogio di Valpolicella, the Boscaini Carlo family tackles the two most challenging expressions of the Veronese territory, both protected by the DOCG designation that unites nineteen municipalities. Amarone della Valpolicella is born from Corvina and Rondinella grapes left to dry, then aged for at least twenty-four months, resulting in dense red wines exceeding 14% alcohol. Recioto follows the same path of grape varieties but leans towards the sweet side, presenting itself as a passito or spumante with at least 12% alcohol. These two labels thus share raw materials and hillside, but diverge in outcome: on one hand, the dry power of a meditation red; on the other, the controlled sweetness of a wine that concludes a meal. Altitude and climate shape each vintage, and the choice to focus solely on Amarone and Recioto makes the winery a focused yet clear observatory on the upper echelon of the Valpolicella hierarchy, where the appassimento (drying process) remains the technical gesture that governs everything.
