In Acqui Terme, Botto Pier Luigi has tied his production to a single grape variety and a single appellation: Brachetto, within the Brachetto d'Acqui DOCG, which defines its boundaries across twenty-six municipalities of southern Piedmont. The aromaticity of Brachetto is recognizable, yet here it is expressed in contrasting registers rather than being flattened into the sole sweet sparkling wine that made it famous. The winery produces three expressions: a dry red, which strips the grape of its sugary vocation; a spumante, the most well-known and festive version; and a passito, where the drying process concentrates aroma and substance. All share the minimum alcohol content of 11.5% set by the production specifications, but they follow distinct sensory paths from the same base. This plural interpretation of a grape often reduced to a cliché places Botto Pier Luigi within one of the most distinctive areas of the regional wine scene, where Brachetto remains the absolute protagonist.
