In Elice, nestled in the hills of Pescara, Cascina Bruno crafts five monovarietal olive oils under the Aprutino Pescarese DOP denomination. All are harvested and milled on the same day using a continuous three-phase system. This swiftness is the cornerstone of their quality: it locks in the herbaceous and moderately fruity profile of the territory and allows each cultivar to tell a different nuance of the same landscape. This same exacting method—meticulous field work, immediate processing, no compromises—also guides the company's other activity: open-field snail farming. The snails are naturally fed and processed with a cruelty-free procedure to extract mucin for a cosmetic line. Olive oil and cosmetics thus share a common production discipline, rooted in attention to detail rather than scale. The farm is open to visitors: it's worth a stop to witness the same-day milling and taste the monovarietals directly where they are born, comparing the different expressions of Pescara's sole olive oil DOP side by side.
