Castelli Michele's extra virgin olive oil falls under the Dauno DOP denomination, an area encompassing sixty-one municipalities in the province of Foggia. The product bears the imprint of the Puglian plains: warm, well-drained soils where Mediterranean varieties find favorable growing conditions. The result is an oil with a shifting hue, gliding from green to yellow depending on the vintage and harvest time, never settling on a single register. On the nose and palate, fruity notes prevail, tempered by barely perceptible spicy and bitter accents, indicative of carefully harvested fruit. This profile speaks of the terroir more than any declaration: the olive-growing vocation of Daunia is evident in the balance between softness and nerve, in moderation rather than power.
