In Manfredonia, on the edge of the Tavoliere plain, Luigia Pasqua's farm manages its olive groves within the Dauno DOP denomination, which embraces 61 municipalities in the province of Foggia. This is a land of calcareous soils and a Mediterranean climate, conditions that the extra virgin olive oil translates unfiltered into a precise and recognizable sensory signature. The profile opens with green fruit: herbaceous notes, a whisper of pepper, and the distinct bitterness of almond skin, a sign of olives harvested at full maturity and processed with care.
