AZ. AGR. CIMENTARA di UGO CAROSI

In Capua, in the province of Caserta, Ugo Carosi's Cimentara winery brings together five denominations spread across the volcanic soils of the Caserta area. The backbone is formed by three DOCs: Falerno del Massico, crafted from Aglianico with twelve months of aging; the crisp white Asprinio wines that define Aversa; and the more structured Riserva wines of Galluccio. Around this core, the two IGTs—Roccamonfina and Terre del Volturno—broaden the range towards fresher, more approachable wines, designed for less ceremonial consumption. The overall picture is one of a fragmented wine geography, made up of extinct volcanoes, river terraces, and ancient Falernian zones, which the producer navigates without seeking a forced synthesis.
