In Negrar, amidst the hills of Verona's Valpolicella, Cesare Righetti's winery cultivates the area's indigenous grapes—Corvina Veronese and Rondinella—to create two expressions that share the same territorial grammar but speak in opposing registers. Amarone is born from appassimento (drying of grapes) and an aging process that allows no haste: twenty-four months during which the wine finds structure and depth. Recioto follows the same path of concentrated grapes but retains the fruit's sugar, concluding on the sweet side of the regulations.
