In the Veronese vineyards that define Valpolicella, Az. Agr. Contrada Palui builds its identity around `Corvina`, `Corvinone`, and `Rondinella`, the trio that governs the great red wines of the nineteen-municipality area. These same grapes, dried and vinified with different intentions, support the company's two `DOCG` denominations, both born from the ancient practice of `appassimento` (drying process) that concentrates aromas and structure. `Amarone`, aged for a minimum of twenty-four months, reaches fourteen degrees with the dry fullness that tradition dictates; `Recioto`, sweet and velvety, is presented both as a still `passito` wine and as a sparkling wine, showing how much versatility a terroir often reduced to a single style can express. A common thread runs between the two wines: that of a slow method that demands patience from the producer before the drinker.
