In San Polo di Piave, in the province of Treviso, Gianluca Crestani's farm oversees two of the most demanding denominations in eastern Veneto, one white and one red, both built on indigenous grape varieties and stringent regulations. Lison DOCG, spread across nineteen municipalities, yields white wines centered on Tai and complementary grape varieties permitted for the Treviso terroirs, with a minimum alcohol content set at twelve percent: dry-cut wines, more about measure than abundance. Piave Malanotte DOCG, extending over sixty-two municipalities, is based on Raboso—a late-ripening, tannic, and long-lived variety—or approved alternatives, requiring at least thirty-six months of aging before bottling. These are two complementary extremes of the same river landscape: on one side, the clarity of the white; on the other, the austerity of a red that demands years to tame its structure. Crestani operates within these constraints with precision, allowing the grape variety and time, rather than the hand, to dictate the profile of each wine.
