In the Asti area, Claudio Canavero's farm interprets Asti DOCG starting from Moscato bianco, complemented by other white grape varieties suitable for Piedmont. The work is split between spumante and Metodo Classico, two paths that derive different levels of pressure and complexity from the same aromatic grape, after a minimum aging of one month. The denomination, among the most recognizable in the Piedmontese landscape, is interpreted here with a focus on depth rather than just immediate floral notes: the mineral character of the soil emerges alongside the fruit and typical Moscato notes. Behind the glass is a family commitment passed down through time, measured by consistency rather than declaration. The company opens its doors for tastings: a visit allows one to follow the journey from vineyard to bottle and directly compare the spumante with the Metodo Classico version, appreciating how the same Moscato changes depending on the path chosen in the cellar.
