Michele d'Alessandro cultivates olives in Bovino, within the Dauno DOP area, which extends over sixty-one municipalities in the province of Foggia. His extra virgin olive oil clearly reflects the territory's profile: a color ranging from green to gold, herbaceous notes intertwined with a touch of spiciness and a clean, recognizable bitterness. It is the gustatory signature of a single denomination, among the most controlled in Puglia's olive oil production. The company's work is precisely measured by these strict regulations, embraced not as a constraint but as a framework within which the character of the Tavoliere can emerge. On the Dauno plateau, where climate and soils leave their imprint on the olive, d'Alessandro pursues the notes that define Dauno DOP: grass, pepper, and bitter almond in balance. The result is an oil that does not seek easy softness, but rather consistency with a codified and defended territorial profile, municipality after municipality.
