From Chiarano, in the Trevigiano area, Az. Agr. Federica Rigoni Stern looks to the Valpolicella territory, a district of 19 municipalities in Verona. Two denominations define their production, both linked to the `appassimento` (drying) of the grapes. The `Amarone della Valpolicella DOCG` is born from `Corvina Veronese`, `Corvinone`, and `Rondinella` grapes and requires at least 24 months of aging to reach the prescribed 14 degrees: a concentrated red, built on the slow dehydration of the bunches. Alongside `Amarone`, the winery produces `Recioto della Valpolicella DOCG`, available in both still and sparkling versions. Here, the `appassimento` process retains some of the sugars, and the wine preserves the sweetness that distinguishes it from the dry reds of the same area. The two labels share the same ampelographic base and technique but diverge in outcome: dry power on one side, sweet balance on the other. It's a focused and coherent production, keeping a steady gaze on a hilly landscape capable of sustaining some of Veneto's most recognizable wines.
